Thirteen students in Advanced Culinary Arts, a Signature program of the Institut de tourisme et d’hôtellerie du Québec (ITHQ), took part in a culinary competition where Quebec pork was honoured.

The week Le porc du Québec à l’ITHQ took place in two stages:

  • • On October 28, the future chefs attended a butchery demonstration with Pierre-Paul Martin, retired from Olymel. They visited a pork farm in virtual reality, and had the opportunity to learn more about the pork industry, and the reality of breeders, through their meeting with Louis-Philippe Roy, breeder and president of Les Éleveurs de porcs du Québec.
  • • On October 31, the six teams concocted three gourmet meals featuring pork picnic shoulder and tongue. A panel of guest judges evaluated the meals and selected the winning team.

Congratulations to the winning duo
Alexandre Marchand and Christopher Manoug

You’ll have the chance to taste the winning meal, adapted as an appetizer, at the Porc Show dinner!
